Zucchini, Chicken and Dumplings
Preheat oven 400 degrees Layer in a 13" x 9" greased baking dish: 2 medium zucchinis sliced 1/4 inch thick 1 1/2 pounds boneless chicken breast cut in 3/4 inch cubes Make white sauce with: 2 Tablespoons butter 3 Tablespoons flour 2 cups milk 1 teaspoon salt 1 teaspoon onion powder Pour white sauce over chicken and zucchini. Bake until bubbly (about 1/2 hour). Make drop biscuits: 3 cups biscuit mix 1 Tablespoon parsley 1/2 cup Parmesan cheese Mix with water until all flour is incorporated. Drop onto hot casserole. Bake 20 more minutes.
